Chicken Pillows

I have been trying out some new recipes this week so I thought I  would share the one I made tonight.

CHICKEN PILLOWS:

1 can of 8 Pillsbury crescents
8 oz. block of cream cheese
1/4 cup butter
2-3 chicken breast
1 egg
one pack saltine crackers


TOPPING

1 can cream of chicken
sour cream (a couple spoon fulls worth)
milk
shredded cheese


Preheat oven to 400 F

Soften 1/4 cup butter and 8oz. block of cream cheese. Then stir to a smooth consistency. Add cooked shredded chicken to the bowl.

Lay out the 8 crescents on a cookie sheet.

Stretch the crescent out. Place a couple spoon fulls of the creamy chicken mixture into the center of the crescent to fill it. Then fold the crescent around the mixture so that none of it is showing. I'll call this the "pillow"

In a separate smaller bowl, put the egg and a little bit of water, maybe a couple Tablespoons worth and beat together.

Dip the "pillow" into the blended egg.

After dipping into the blended egg, proceed to dip it into the crushed saltine crackers and place on cookie sheet. Repeat for the remaining 7 crescents.

Cook the pillows at 400 F for 20 minutes. Keep an eye on them your oven might cook them quicker.


For the sauce topping:

Put can of cream of chicken and milk into a sauce pan. Add as much milk as you want to get it to the consistency you want i.e. thicker or runnier. When hot enough add 2 spoon fulls of sour cream and cheese to your liking.

These turned out really good! My kids even liked them and thats a plus because we all know kids can be hard to please!

Kindergarten

I know this is a little late but I still want to document it.

Hunter started K5 on August 8th 2011. He goes to the same school he went to preschool at so he was ready to go back! He was such a big boy and went in and sat at his desk. School has been in for 3 weeks and Hunter is loving it! I'm so proud! I don't have any pictures because 1. He hates his picture taken and 2. My camera card was corrupted in the machine at WM with the only two pictures that I did get of him. I plan on re-taking them soon!

Saddle up your horses

Harper turned Two on August 12th, we celebrated on Saturday the 13th and the theme was Horses. This girl LOVES horses so it was set pretty quick on what theme we would go for. All of our friends and family came out to the farm and we had a really great time! Nana and Paw Paw Sam even rented an 8 horse carousel..it was a big hit! Thanks everyone for celebrating with us!

Two year check up






Harper had her two year check-up on August 15th, her stats are:

Weight- 37lbs 7oz

Height- 34in

Dr S said she was doing very well and he had no concerns. She is a little behind on her speech but we will be seeing the genetics dr in October to talk about that and her head size. She is a healthy happy 2 year old and we love her so much!

After her visit she got to go play with her cousin Bailey for a little while.

Harper is turning two next week so I decided to take some photos of her. She has 3 different outfits but I have only gotten some pictures in one so far. (its not easy to take pictures of a toddler) It makes me sad that she is growing up,she is such a sweet girl!

My Nephew Brooks

Brooks Asher turned 3 months old on July 21, so of course Aunt Jana had to snap some photos of his sweet little self. He is starting to smile and coo and its so precious! I just want to squeeze his chubby little cheeks!

Today we went swimming at nana and paw paw's house,it was a great way to stay cool!
